Rosh Hashanah 2014 or 5775 Preparation

Today is September 11th and I am already preoccupied with preparation for Rosh Hashanah 2014 or 5775.  This year is one of the dreaded triple whammy years, when Yom Tov falls on Wednesday evening the 24th of September, which means, if you are observant, that you have holiday Wednesday night, Thursday night and Friday night. The days include Thursday, Friday and Saturday-Shabbat.  That is quite a few dinners and lunches to prepare for. My family enjoys something different each night, different presentation, different table cloth, different dishes, all while keeping our Sephardic Simanim (traditional symbolic foods) custom.  Lunch is pretty much a piece of cake, literally and figuratively.  Some cake, Challah, Fish and the Sephardic dairy Desayuno (breakfast), including, Boyus, [1] Borekas [2], and Fritada [3] (frittata). 

Thus far my freezer contains some Challah [4], cheese Borekas, Boyus, Kuftes de Prassa [5], Banana cake [6], and Chocolate Espresso Cake [7], two briskets [8]and 12 dozen Pastelicos de Carne [9].  There is still a long list remaining, so I plan to make something every day and freeze until the holiday.  With all of that in mind, I noticed fresh pomegranates, new crop apples, fresh dates on their branches, and leeks in the farm market last week.  I think the pace on the treadmill of life is picking up, and it is kind of exciting!

For the dinners I designed this template a couple of years ago.  It helps me remember all the elements of a successful Rosh Hashanah dinner.  Friday night is a Shabbat dinner and does not require Simanim.
