Loved watching you make these Bourekas.
You brought me back to my childhood in Greece. I took this for lunch to the Jewish school I attended in Athens.
Cant’t wait to make them after Passover.

Remember we met at Sheilah’s house? I watched your borekas recipe and I loved it. I feel like I’m standing in your kitchen with your sisters. So intimate, and you make the whole process look wonderfully easy. In my family, we don’t do the twisting of the boreka at the end. You said there was a name for that in Ladino, but I didn’t quire understand it. Could you tell me that word? Best Regards, and hope to see you again, soon. Hi Beyhan, so nice to hear from you. I will not be attending the Festival , although I would love to , I live in the Los Angeles area. The name of the twisted edge on the borekas is called repulgo. It is from a Spanish word , actually a verb, repulgar, which means border or create a border, an edge.
