Cinnamon, a rolled then dried, piece of bark, harvested from several trees, is one of the most widely used flavorings in the world. It cuts across continents, ethnicities and cultures, while used in sweet, savory, and hot spicy dishes. Cinnamon not only makes cinnamon rolls irresistible but can be found in coffee cake and other sweets and in meatballs (kufte), kabobs, curries, stews, stuffed meat filled pastry (kibeh, pastelicos), rice and tea. Cinnamon comes most commonly from Indonesia, Sri Lanka, Vietnam, Mexico, and China. (I try not to purchase any food products from China since the infamous toothpaste and dog food incidents.)
